Freeze-dried dragon fruit, that is, fruit dried by freezing, goes through a process in which it is rapidly frozen and then slowly dried in a vacuum. This removes 95% of the water as well as acetic acid. Freeze-dried fruit retains its taste, aroma, texture and natural colour, as well as the vitamins, nutrients and minerals normally found in fresh fruit. If freeze-dried fruit is stored correctly, it has a long shelf life. Freeze-dried dragon fruit retains the properties of exotic fruit with a pleasant crunch.
