• Sweet potatoes: Among the vegetables with the highest nutrient content, providing antioxidants, beta-carotene, vitamins (B6, E), minerals (magnesium, calcium) and protein.
• Pumpkin: One of the lowest-calorie vegetables, rich in vitamin C, beta-carotene, minerals and phytosterols. Thanks to its fibre content, it is easily digestible and aids digestion.
• Fennel: Rich in essential oils that are beneficial for digestion and the gut. It also contains important nutrients such as potassium, vitamin A, folic acid, vitamin C and silicon dioxide.
• Jerusalem artichoke: Contains a high proportion of inulin, which has a prebiotic effect and stimulates the growth of healthy bacterial strains in the gut. A healthy gut flora has a positive effect on the immune system.
• Blackberries: These berries contain particularly high levels of magnesium and iron. Their content of provitamin A and vitamin E also exceeds that of their cultivated counterparts.
